The cuisine of the French Basque Country is brightly coloured.
It includes pimientos de Ezpeleta (peppers), jamón de Baiona (cured
ham), los chipirones de San Juan de Luz (squid), and salmón del Adour
(salmon). Among game birds, pigeon has a great culinary tradition. In addition,
it is all washed down with wine from Irulegi, or a glass of Izarra wine. Always
present is desert, particularly pastel vasco (a local cake), and fresh or cured
goat cheese with cherry jam.
